Ingredients:
2 lg. bonless, skinless, chicken breasts, halved lengthwise & pounded
Kosher salt
Freshly ground black pepper
8 slices deli ham
8 slices deli Muenster cheese
2 tbsp olive oil
1/2 sm onion, thinly sliced
2 tbsp butter
1 (8-oz.) pkg. white mushrooms, sliced
3 medium cloves garlic, minced
1 tsp chopped fresh thyme
2 tbsp all-purpose flour
1 tbsp Worcestershire sauce
2 cups beef broth, hot
2 tbsp chopped fresh Italian parsley
Kitchen twine
Directions:
Lay the chicken flat on a work surface and season with salt and black pepper. Evenly top each piece of chicken with ham and cheese. Roll up each piece of chicken while tucking in the sides to completely enclose the filling. Tie up each chicken roll using the kitchen twine.
Heat a braising pan over medium-high heat. Add the oil and when hot, add the chicken and sear until browned on all sides, about 5-7 minutes. Remove the chicken from the pan and set aside.
Return the pan over medium heat. Add the onion and sauté just until browned and caramelized, about 8-10 minutes.
Add in the butter, and mushrooms, season with salt and sauté until the mushrooms brown, about 5-7 minutes.
Add in the garlic, and thyme, and sauté until fragrant, about 30 seconds. Add in the flour and cook stirring until the flour becomes incorporated and no longer white. Add in the worcestershire sauce and cook until evaporated.
Add in the broth, deglaze the pan and bring to a simmer. Return the chicken, cover and continue simmering just until the chicken cooks through, about 6-8 minutes, turning halfway through.
Uncover the pan and continue simmering just until the sauce thickens. Remove from heat, plate, garnish with parsley and serve.
