Chicken Provolone

Start by browning seasoned chicken cutlets in a hot skillet until they are golden brown and cooked through. Simmer the wine with butter, and peppers, and a ladle of broth to create a silky reduction. Top each piece with a generous slice of provolone cheese. Cover the pan until the cheese melts into a perfect, bubbly layer. Finally, spoon the savory sauce over the top, garnish with basil and serve warm alongside pasta, rice, or fresh greens.

The Night of a Thousand Shaky Breaths:
I was a nervous wreck while I prepped a cheesy chicken dinner for Maria, my sister’s good friend, but I wanted to impress her. As the oven timer ticked down, my hands shook while setting the table. When the doorbell finally rang, taking a deep breath, I opened the door to welcome her inside.

The comforting aroma of garlic and wine immediately filled the air. We sat down to eat, and the rich, savory flavors put me right at ease. She took her first bite, let out a delighted sigh, and instantly complimented my cooking.

We quickly moved past the awkward small talk and began reminiscing about shared memories from the past. We laughed over funny stories involving my sister and talked about our biggest dreams. The conversation flowed effortlessly, feeling as natural as breathing.

Ingredients:
2 large chicken breasts, halved lengthwise 
Kosher salt 
Freshly ground black pepper 
1/3 cup all-purpose flour
4 tbsp unsalted butter (divided)
2 tbsp extra-virgin olive oil
4 cloves garlic, thinly sliced 
1/2 cup sliced banana or mild peperoncini peppers, drained
1 cup dry vermouth
1/2 cup chicken broth
4–8 slices deli Provolone cheese
2 tbsp fresh basil leaves,  chiffonade 

Directions:
Season the chicken with salt and black pepper.  Lightly dredge the chicken in flour, shaken off the excess.

In a heavy sauté pan over medium-high heat, add 2 tbsp butter, and 2 tbsp oil, and when hot, add the chicken and sear until browned on both sides, about 5-7 minutes. Remove the chicken from the pan and set aside.

Return the pan over medium heat. Add the garlic and sauté until lightly golden, about 1 minute. Add in the banana peppers and sauté for 1 minute.

Add in the wine and deglaze the pan. Add in the broth, season with salt and black pepper and bring to a simmer. Return the chicken,  lower heat to low and simmer uncovered until the chicken cooks through, about 6-8 minutes.

Top each piece of chicken with cheese, cover and continue simmering just until the cheese melts, about 1 minute.

Remove from heat, remove the chicken from the sauce and set aside. Add the remaining butter to the sauce and stir until the butter melts and the sauce slightly thickens.

Plate, pour the sauce over the chicken, garnish with basil and serve.
