Sizzle like a master, taste like a legend:
Working at Mr. Lee's Chinese restaurant changed my routine completely. The dining room was always full of noisy, happy guests. Nearly every single table ordered the same legendary dish. Our chicken chow mein was the absolute favorite among all our loyal customers.
I spent my first few months working far away from the heavy iron ranges. I scrubbed heavy pots and wiped down sticky wooden tables. The rich aroma of the kitchen followed me everywhere I went. I watched the plates leave the pass-through window day after day, wondering how this specific meal captured everyone's hearts.
A quiet Tuesday afternoon finally brought my big chance. The lunch rush had faded, leaving the kitchen peaceful and still. Mr. Lee walked over to my station and motioned for me to stand right beside him. He did not hand me a book or speak many words. Instead, he showed me how to balance the rhythm of the signature chicken chow mein. He taught me to watch the colors change and listen to the sounds of the pan.
I copied his exact movements with a nervous heart. The timing felt tricky, but Mr. Lee corrected my pace with a gentle tap on the shoulder. When the final plate was ready, the rich aroma filled the small space. Mr. Lee took one small bite, smiled, and nodded at last.
