Back in my younger days with an almost empty fridge, I invented cherry lime chicken out of pure necessity. I stared down a lone chicken breast, a forgotten jar of sweet cherry preserves, and a bright green lime rolling around the counter. Desperation met creativity, and I tossed those random ingredients together in a hot pan.
The magic happened as the sweet cherry jam melted down and mixed with the sharp, sour lime juice. It bubbled up into a sticky, glossy glaze that coated the seared chicken in a gorgeous ruby red. When I took that first bite, the sweet and tangy flavors exploded in the best way possible.

Ingredients:
2 lg. boneless, skinless chicken breasts, halved lengthwise
Kosher salt
Freshly ground black pepper
⅓ c. all-purpose flour
2 tbsp. olive oil
1 sm. onion - ½ inch strips
4 lg. cloves garlic - thinly sliced
2 tbsp. sugar
½ tsp. red pepper flakes
½ c. fresh lime juice
16 fresh cherries - pitted
⅓ c. cherry preserves
2 tbsp. fresh basil leaves - chiffonade
Directions:
Season the chicken with salt and black pepper. Lightly dredge the chicken in the flour, shaking off the excess.
Heat a pan with high sides over medium-high heat. Add the oil, and when hot, add the chicken and sear until browned on all sides, about 5 to 7 min, per side. Remove the chicken from the pan and set aside.
Return the pan over medium heat. Add in the onion and sauté until the onion begins to soften, about 3 to 5 min. Add in the garlic and sauté until lightly golden, about 1 min.
Add in the lime juice and deglaze the pan. Add in the red pepper flakes, and sugar, and mix well. Return the chicken, add in the cherries, cover and bring to a simmer. Lower heat to low and simmer until the chicken is cooked through, about 10 min, turning after 5 min.
Remove the chicken from the sauce and set aside. Add in the preserves and stir until melted. Season with salt and black pepper if needed. Plate, pour the sauce over the chicken, garnish with basil and serve.
