Pork & Apple Stir-Fry

Working at Mr Lee’s Chinese restaurant, I was always eager to push my culinary boundaries. One slow evening, Mr. Lee pointed at the walk-in cooler and challenged me to create an original stir-fry using whatever leftover ingredients I could find. I quickly accepted the challenge, determined to prove my skills.

Inside the cooler, I gathered fresh pork, and crisp apples, from the prep station. I also grabbed some minced ginger, garlic, and scallions. To tie it all together, I raided the pantry for soy sauce, rice vinegar, and a touch of Shaoxing wine. The sweet apples offered a perfect contrast to the savory meat.

I seared the pork quickly in a hot wok before tossing in the apples to preserve their textures. Stir-frying the mixture with my sweet and savory sauce, I created a vibrant Cantonese pork and apple stir-fry. Mr. Lee was thoroughly impressed, and from that day on it quickly became a highly requested meal from the kitchen staff. 

My loved ones still eagerly beg for my Chinese pork and apple stir-fry today. The sweet and savory aroma of soy sauce and caramelized fruit instantly transports them back to our cozy kitchen table. Even years after I first tossed this dish together at the restaurant, it remains the ultimate comfort food they demand at every family gathering and friendly get-together.

Ingredients:
For the pork:
1 lb. thin-cut pork rib chops, 1/2 inch strips
2 tbsp cornstarch 
1 tbsp soy sauce 
1 tbsp sesame oil

For the sauce:
1/2 c apple jelly
1/4 c chicken broth
2 tbsp rice vinegar 
1/3 tsp five spice powder 
Kosher salt
Freshly ground white pepper

For the dish:
Peanut oil
1 inch ginger,  chopped 
3 lg cloves garlic, chopped 
8 whole dried chili peppers
1 tbsp shaoxing wine 
2 fresh cosmic crisp or red delicious apples,  peeled, cored & cut into wedges 
3 scallions, 1-inch bias (green part only)
Cornstarch slurry - if needed

Directions:
For the pork:
In a bowl, combine the pork, cornstarch, and soy sauce and mix well. Add in the sesame oil, mix well, cover and set aside for 30 minutes.

For the sauce:
In a bowl, combine the apple jelly, broth, vinegar, five spice powder, season with salt and white pepper, mix well and set aside.

For the dish:
Heat a wok over high heat until smoking. Add the oil and went hot, add the pork and stir-fry until browned on all sides, about 3-5 minutes. Remove the pork from the wok and set aside.

Return the wok over high heat. Add 2 tbsp oil and when hot, add the garlic, ginger, and chili peppers, and stir-fry for 30 seconds. Pour the Shaoxing wine around the rim of the wok and stir-fry for 1 minute.

Return the pork, add in the apples and stir-fry fry for 1 minute. Add in the sauce mixture and stir-fry for 1 minute.

Remove from heat, plate, garnish with scallions and serve.
