Ingredients:
Olive oil
2 lg onions, sliced 1/2 inch
1 fresh bay leaf
1 lb calf liver (4 steaks)
Kosher salt
Freshly ground black pepper
1/4 cup dry white wine
2 tbsp butter
2 tbsp chopped fresh Italian parsley
Directions:
Heat 2 tbsp oil in a large sauté pan over medium-high heat. Add the onion, and bay leaf, and sauté until the onions become soft and lightly golden, about 10-12 minutes.
Return the pan over medium heat. Add 2 tbsp oil and when hot, add the liver and sear just until browned on the first side, about 1-2 minutes, (do not season the liver with salt at this time because it will make the liver tough).
Turn the liver onto the second side, return the onions and continue cooking just until the liver browns, about 1-2 minutes.
Add in the wine, deglaze the pan and simmer for 1-2 minutes. Season with salt and black pepper.
Remove from heat, add the butter to the sauce and stir until the butter melts and the sauce thickens slightly.
Plate, garnish with parsley and serve.
