As a young man, the menu offered countless sophisticated options, yet my decision was made before I even sat down. Every single visit, I ordered the Imperial duck. It was an absolute masterpiece of culinary art, tender, rich, and flawlessly balanced in flavor. The waitstaff eventually stopped handing me a menu, knowing exactly what I wanted the moment I walked through the doors.
That signature dish became a comforting obsession, a gold standard against which I measured every other meal. The aroma alone was intoxicating, blending deep savory notes with subtle, fragrant spices that melted on the tongue. It was more than just dinner; it was an experience I looked forward to all week, a moment of pure indulgence during those bustling, formative years of early adulthood.
Eventually, the desire to capture that magic in my own kitchen took over. I embarked on a journey of culinary experimentation, determined to recreate the experience from memory. Through trial and error, adjusting the proportions and refining the technique, I developed a highly personal version of the dish. It took time to find the exact rhythm of simmering and reducing that made the original so spectacular, but the effort was entirely worth it.
When the dish finally came together in my own dining room, the familiar aromas filled the space, instantly transporting me back to those quiet, upscale dining tables. Taking the first bite of my homemade rendition, I knew I had succeeded in capturing the essence of that beloved meal. It remains a cherished staple of my cooking repertoire, a testament to turning a favorite dining memory into a rewarding, personal craft.
Ingredients:
1 (4-5 lb.) whole duck - cut into 8 pieces
Kosher salt
Freshly ground white pepper
3 tbsp peanut or vegetable oil
1 inch fresh ginger, sliced
4 scallions, green parts 1 inch bias &white parts thinly sliced (separated)
4 cloves garlic, smashed
1/8 c Shaoxing wine
2 c duck or beef stock, hot
2 tbsp oyster sauce
2 tbsp light soy sauce
1/2 tsp dark soy sauce
1 inch piece dark brown rock sugar
2 dried bay leaves
Cornstarch slurry
1 tbsp sesame oil
Directions:
Wash the duck under cold water, then pat dry using paper towels. Season the duck with salt and white pepper.
Heat the peanut oil in a large braising pan over medium-high heat. Add the duck and sear until browned on both sides, about 6-8 minutes. Remove the duck from the pan and set aside.
Return the pan over medium heat. Add the ginger and stir-fry until the edges begin to brown, about 1 minute. Add in the white scallions, and garlic, and stir-fry until fragrant, about 30 seconds.
Add in the Shaoxing wine and deglaze the pan. Add in the stock, oyster sauce, soy sauce, dark soy sauce, sugar, and bay leaves, mix well and bring to a simmer.
Return the duck, skin-side up, cover, lower heat to low and continue simmering until the duck begins to fall off the bone, about 90 minutes, turning halfway through.
Remove the duck from the sauce and set aside. Strain the sauce through a fine mess strain, then return the sauce to the pan and bring to a simmer.
Add as much of the cornstarch slurry as needed to the sauce while stirring until the sauce slightly thickens, about 1-2 minutes.
Remove from heat and season with salt and white pepper if needed. Add in the sesame oil and mix well.
Plate, pour the sauce over the duck, garnish with scallions and serve.
