Toss the warm pasta directly into the skillet with a splash of reserved cooking water, fresh lemon juice, and a grating of Parmesan cheese.

Spring had finally arrived, and nothing beats the feeling of leaving the windows open to let a crisp, cool breeze drift through the house. Inspired by the refreshing weather, I decided to whip up a batch of penne pasta with lemons and artichokes using a beautiful bag of fresh lemons a dear friend recently gifted me. Sautéing the ingredients to golden perfection created an inviting, zesty aroma that filled every room.

This vibrant dish came together incredibly easily by combining tender artichoke hearts, briny olives, and fragrant garlic, all gently sauteed to bring out their deepest flavors. To make the magic happen, I tossed everything with freshly squeezed lemon juice and bright lemon zest, then topped it all with a generous dusting of grated Parmesan cheese. A final garnish of freshly chopped parsley added the perfect pop of color and a fresh, herbaceous finish to the meal.

Without a doubt, this delightful recipe goes down as one of my best culinary creations to date. It was the absolute perfect way to use up the generous bag of lemons my friend gave me, transforming simple pantry staples into a restaurant-quality feast. Every single bite was bright, savory, and undeniably delicious, making it a new springtime favorite I definitely makes my weekly rotation each springtime.

Ingredients:
1 lb. penne pasta
Extra-virgin olive oil 
4 lg cloves garlic - sliced 
1/4 tsp red pepper flakes 
28-oz quartered artichoke hearts 
1/2 c whole pitted kalamata olives 
2 fresh lemons - zested & juiced 
Kosher salt 
Freshly ground black pepper 
1/4 c Parmesan cheese, freshly grated 
1/4 c chopped fresh Italian parsley

Directions:
Bring a large pot of salted water to a boil. Cook the pasta in the boiling water according to package directions to al dente. Drain reserving 1 cup of pasta water.

In the meantime, heat a pan with high sides over medium heat. Add 2 tbsp oil, the garlic, and red pepper flakes, and sauté until the garlic becomes lightly golden,  about 1 minute.

Add in the artichoke hearts, and olives, and saute for 3-4 minutes. 

Add in the drained pasta, lemon zest, lemon juice, season with salt, and black pepper, and toss to combined.

Remove from heat, add in the cheese and parsley, lightly drizzle with oil and toss to combined.

Plate and serve.
