Kosher salt
Freshly ground black pepper
1 large shallot, 1/4 inch dice
4 cloves garlic, chopped
1 tsp chopped fresh thyme leaves
1 1/2 cups heavy cream
1/4 cup vegetable broth (optional)
1 cup grated Parmesan cheese
1 lb penne pasta, uncooked
1 tbsp chopped fresh Italian parsley
White truffle oil (optional)
Directions:
Bring a large pot of salted water to a boil. Cook the pasta in the boiling water according to package directions to al dente. Drain.
In the meantime, heat a pan with high sides over medium heat. Add the oil and mushrooms, season with salt and black pepper, and sauté until most of the liquid has evaporated and the mushrooms begin to brown, about 5-7 minutes.
Add in the shallot, garlic, and thyme, and cook stirring for 1 minute. Add in the cream and broth, mix well, bring to a simmer and continue simmering for 1-3 minutes.
