Working as an apprentice at Mr. Lee’s Chinese restaurant, I spent my shifts prepping ingredients and soaking up the fast-paced kitchen atmosphere. For our daily staff lunch, I would whip up a secret stir-fry of fresh shrimp and crisp asparagus. Though never listed on the public menu, this vibrant, savory dish became an underground hit that the whole crew eagerly looked forward to every afternoon.

The kitchen was an intense, steaming labyrinth of roaring woks and sizzling garlic, where I first learned how to balance my station while nursing the inevitable burns and cuts on my forearms. Mr. Lee, a stern but incredibly generous mentor, ran a tight ship that demanded perfection during dinner service. However, during the quiet lull between the lunch rush and evening prep, he would let me take over the burners for the family meal. I always made sure to grab the plumpest shrimp from the walk-in cooler and snap the woody ends off the freshest asparagus spears we had reserved for the weekend specials. Tossing them in a classic brown sauce with a splash of Shaoxing wine became my quiet moment of creative freedom amidst the chaos.

When the wok was finally ready, I’d dump the fragrant, snappy stir-fry onto a communal platter and set it on the prep table, where the rest of the staff would descend like clockwork. Watching the dish vanish in minutes, with the servers, dishwashers, and even Mr. Lee himself sneaking extra bites right out of the pan, gave me a deeper pride than any customer compliment ever could. It was our little secret, an unwritten perk of the grueling apprenticeship that turned a room of tired coworkers into an extended family bonded by a perfectly cooked lunch.

Ingredients:
2 tbsp peanut or vegetable oil 
1 bunch asparagus, 1 inch bias (tips set aside)
3 cloves garlic, chopped
2 tbsp Shaoxing wine
1 lb extra-large shrimp (26-30), peeled, deveined, & butterflied
Sea salt
Freshly ground white pepper 
1/2 cup shrimp stock
11/2 tbsp seasoned soy sauce
1 tbsp oyster sauce
1/2 tbsp dark soy sauce
1/2 tbsp sesame oil
1/2 tsp dark brown sugar
Cornstarch slurry

Directions:
In a bowl, combine the stock, seasoned soy sauce, oyster sauce,  dark soy sauce, and sugar, mix well and set aside.

Heat a wok over high heat until smoking. Add 2 tbsp. peanut oil and swirl around to coat the wok. Add the asparagus stems and stir-fry until the stems begin to soften, about 1 min.

Add in the garlic and stir-fry until fragrant, about 30 seconds. Push the asparagus to the sides of the wok. Add in the shrimp and sear until pink on the bottom side. Stir-fry until the shrimp turned pink and cook through, about 3-5 minutes. 

Add in the asparagus tips and stir-fry for 1 minute. Pour the Shaoxing wine around the perimeter of the wok. Add in the sauce mixture, deglaze the wok and bring to a simmer.

Season with white pepper. Add in as much of the cornstarch slurry as needed to thicken the sauce while simmering and stirring until desired thickness.

Remove from heat, add in the sesame oil, mix well, plate and serve.
