I thought about the fresh kale sitting in my fridge. I bought it for a different meal earlier in the week. That day, however, a hot soup was exactly what I needed.
I decided to make mom’s classic sausage and kale soup. I remembered watching her make it when I was young. I pulled out her old, worn-out recipe card. Every step on the card brought back warm memories. I started by prepping the sausage on the stove. The rich, savory aroma immediately filled the cold kitchen. It felt like a warm hug on a miserable day.
Next came the kale. I chopped the deep green leaves into small, bite-sized pieces. Mom always told me that the kale was the heart of the dish. I tossed the leafy greens into the bubbling pot. Ingredients:
2 tbsp olive oil
1 lb mild Italian sausage links, casings removed
1 med onion, chopped
3 cloves garlic, minced
1/4 tsp red pepper flakes
2 bunches fresh kale, stemmed & torn into bite-size pieces
Kosher salt
Freshly ground black pepper
8 cups chicken broth, hot
2 (15-oz.) cans cannellini beans, drained & rinsed
1 tbsp chopped fresh basil leaves
Directions:
In a dutch oven over medium-low low heat, add the oil and when hot, cook the sausage until browned on all sides, about 5 minutes. Remove the sausage from the pot and set aside.
Return the pot over medium heat. Add the onion and sauté until soft and translucent, about 3-5 minutes. Add in the garlic and red pepper flakes, and sauté until fragrant, about 30 seconds.
Add in the kale, season with salt and black pepper, cover and cook until tender, about 3-5 minutes.
Raise the heat to high, add in the broth, beans, return the sausage, and bring to a boil. Lower heat to low and simmer uncovered for 15-20 minutes, stirring occasionally.
Remove from heat, add in the basil, plate and serve with the cheese and bread on the side.
