Grandma’s Chicken Noodle Soup

Whenever a bad cold or seasonal flu kept me home from school as a child, the world narrowed down to the living room sofa, endless daytime television, and the arrival of my grandmother. She would walk through the front door carrying a heavy, worn pot that practically radiated warmth and safety, instantly chasing away the chills and aches of sickness.

Her legendary soup was more than just a meal; it was a carefully guarded ritual meant to restore the spirit. While the soft noodles and tender poultry offered gentle comfort, it was the vibrant, golden hue of the broth that held her greatest restorative power, a subtle, earthy fresh turmeric root she insisted on grating directly into the pot.

Sitting wrapped in blankets with that steaming bowl in my hands, the peppery warmth of the elixir made every sniffle and fever feel manageable. Those afternoons spent in her care remain some of my fondest childhood memories, turning a miserable sickness into a cherished tradition of love and healing.

Ingredients:
For the stock:
8 med. bone-in skin-on chicken legs
8 cups cold water
8 cups premade chicken broth - cold
1 bunch parsley stems
1/2 lg. onion
4 lg carrots
1 bunch celery tips with leaves, about 2-3 inch
1 sprig fresh thyme
1 bay leaf (optional)
1 tsp black peppercorns (optional)
1-2 sm fresh turmeric, roughly chopped
4 Ig cloves garlic, smashed

For the soup:
2 tablespoons olive oil
1/2 lg onion, 1/2 inch dice
3 med. carrots, sliced 1/2 inch rounds
3 celery stalks, sliced 1/2 inch
10-12 c. chicken stock
2 c wide egg noodles
Kosher salt
Freshly ground black pepper
Cornstarch slurry, (optional) to thicken the soup

Directions:
For the stock:
Place the chicken in a stock pot. Add in the water, broth, parsley stems, onions, carrots,  celery, thyme, bay leaf, peppercorns, turmeric, and garlic. 

Bring to a simmer over high heat, (do not boil). Lower heat to low and continue simmering for 11/2 to 2 hours, skimming the form from the top, (do not stir the stock, as this will make the stock cloudy).

After the first 40 minutes, remove the chicken from the stock. Remove the skin and bones from the chicken then return just the skin and bones back into the stock. When cool enough to handle break the chicken meat up into bite size pieces and set aside until ready to use.

Remove the stock from heat and let the stock cool in the pot for 1 hour. When the stock has cooled, strain the stock through a fine mesh strainer lined with cheesecloth, discarding the bones and vegetables.

Refrigerate the stock in the pot uncovered in the refrigerator overnight. The next day, remove and discard all visible congealed fat.

For the soup:
Heat a dutch oven over medium heat. Add the oil and onions, season with salt and sauté until the onions become soft and translucent,  about 3-5 minutes.

Add in the carrots and celery,  and sauté for 1 minute. Add in the stock, deglaze the pan and bring to a simmer. Season with salt and black pepper, lower heat to low and continue simmering for 5 minutes.

Add in the chicken and noodles, and continue simmering, just until the noodles become al dente, about 6-8 minutes. 

To thicken the soup if needed, add in as much of the cornstarch slurry as needed while stirring until slightly thickened.

Remove from heat, plate and serve.
