4 cups turkey or chicken stock, hot
1/4 cup pure maple syrup (optional)
Toasted pumpkin seeds (optional)
Directions:
Heat a dutch oven over medium-low heat. Add the butter and when melted, add the onion and sauté until the onion becomes lightly browned and caramelized, about 15-20 minutes.
Raise the heat to medium, add in the celery, season with salt and white pepper, and saute for 1-2 minutes.
Add in the garlic, ginger, cinnamon, clove, and nutmeg, and sauté until fragrant, about 30 seconds. Add in the pumpkin and stock, season with salt and white pepper, and bring to a boil. Lower heat to low and simmer uncovered for 10 minutes, stirring occasionally.
Remove from heat, using an immersion blender, or working in batches, transfer the soup to a blender and purée until smooth.
Return the puréed soup back into the pot and season with salt and white pepper if needed.
Add in the maple syrup, heat through, plate, garnish with pumpkin seeds and serve.
