The Tuesday rush had completely blindsided me. Between back-to-back appointments and errands, the last thing I had was the energy to stand at the stove. I had a bunch of kids to feed and tossing Italian sausage, frozen meatballs, and tomato sauce into my slow cooker that morning was a lifesaver, ensuring a comforting, hearty family dinner awaited us without the last-minute panic.
By the time evening rolled around and I finally walked through the door, the house smelled incredible. The sausage had rendered into the rich tomato sauce, adding a deeply savory flavor. I just had to add the pasta, toss it all together and serve it up with a generous sprinkle of parmesan cheese.
Sitting down to that steaming plate of pasta instantly melted the day's stress away. It was a rustic, rich, and incredibly satisfying meal that tasted like it had been simmering all weekend, when in reality, the slow cooker did all the heavy lifting. Ingredients:
1 large onion, 1/2inch dice
6 cloves garlic, thinly sliced
3 tbsp extra-virgin olive oil
2 (28-oz.) cans crushed tomatoes
1 (6-oz.) can tomato paste
6 cups beef broth
1 1/2 tbsp dried Italian seasoning
1 tsp red pepper flakes
12 fresh sage leaves, torn by hand
2 (3/4-oz.) pkgs fresh basil leaves, torn by hand & divided
Kosher salt
Freshly ground black pepper
1 lb mild Italian sausage links, 1 inch pieces
32 frozen pre-made meatballs
2 lb spaghetti pasta, uncooked
Extra-virgin olive oil
Parmesan cheese, freshly grated (optional)
Crusty bread ( optional)
Directions:
In a (6-quart), oval-shaped slow cooker, combine the onion, garlic, oil, crushed tomatoes, tomato paste, broth, Italian seasoning, red pepper flakes, sage and half the basil. Season with salt and black pepper and mix well.
Add in the sausage and meatballs, making sure they're submerged in the sauce, cover and cook on high for 5-6 hours, or on low for 7-8 hours.
30 minutes before it's ready, remove the sausage and meatballs from the sauce and set aside. Season the sauce with salt and black pepper If needed. Add in the pasta, stir to coat in sauce, cover and continue cooking on low heat for the remaining 30 minutes, or until the pasta becomes al dente, stirring occasionally.
Add in the remaining basil, return the sausage and meatballs and heat through. Plate, lightly drizzle with oil and serve with the cheese and bread on the side.
