It was a bone-chilling, freezing afternoon when the craving hit me for something warm and creamy that would truly soothe my soul. Scrambling through my cluttered computer files for an old comfort food recipe, I stumbled across a forgotten document that instantly transported me back in time.
Reading through the steps brought back vivid memories of my teenage years working at Pastosa Ravioli. Back then, we spent our shifts making fresh tortellini from scratch, and I would eagerly whip up this very soup for my lunch. It started as a spontaneous kitchen experiment during those shifts, but it quickly won over the staff and earned its rightful place in my culinary repertoire.
Now, decades later, this rich, nostalgic creation remains firmly on my weekly dinner rotation throughout the winter months. Ingredients:
2 tbsp olive oil
1 lb mild or hot Italian sausage links, casings removed
1 small onion, 1/2 inch dice
Kosher salt
Freshly ground white pepper
4 lg cloves garlic, minced
3 tbsp all-purpose flour
1 tsp dried Italian seasoning
2 cups heavy cream
8 cups chicken stock, hot
5-oz. fresh baby spinach
12-oz. dry cheese & spinach tortellini
2 tbsp fresh basil leaves, chiffonade
Freshly grated Parmesan, for serving
Directions:
Heat the oil in a Dutch oven over medium heat. Add the sausage and cook breaking up the meat with a wooden spoon into bite-size pieces until browned on all sides, about 5-7 minutes. Remove the sausage from the pot and set aside, reserving the fat in the pot.
Return the pot over medium heat. Add the onion, season with salt and white pepper, and sauté until the onion becomes soft and translucent, about 3-5 minutes.
Add in the garlic and sauté until fragrant, about 30 seconds. Add in the flour and cook stirring until lightly browned, about 1-2 minutes.
Slowly whisk in the stock and bring to a boil. Return the sausage, lower heat to low and simmer uncovered for 5 minutes,stirring occasionally.
Add in the pasta, season with salt and white pepper, and continue simmering until the pasta becomes al-dente, about 8 minutes, stirring occasionally.
Add in the spinach and cook just until the spinach wilts, about 1 minute. Stir in the cream and basil, and heat through.
Plate, and serve with the cheese on the side.
