Italian Pasta Salad

My famous Italian pasta salad is the undisputed star of our Brooklyn neighborhood during the sweltering summer months. Brimming with perfectly cooked rotini, spicy salami, and fresh provolone, it brings bold Mediterranean flavor to every family gathering, outdoor barbecue's, and block partys.

When June arrives, the fire hydrants open and the smell of charcoal grills fills the air across the boroughs. I always toss a massive, chilled batch of this pasta salad, letting the zesty vinaigrette soak into the pasta overnight. Whether we are at a crowded backyard barbecue in Bay Ridge or a lively block party in Bensonhurst, this refreshing side dish instantly draws a crowd of hungry family members.

My family and friends demand I bring it to every event, claiming the party cannot start until my bowl is out on the folding table. Every bite perfectly balances crunchy garden vegetables with savory Italian meats, offering a cool, tangy break from the summer heat. Ingredients:
1/2 cup extra-virgin olive oil 
1/4 cup white wine vinegar 
3 tsp Dijon mustard 
1/2 tsp onion powder 
1/2 tsp garlic powder 
1 tsp dried Italian seasoning 
Kosher salt 
Freshly ground black pepper 
1 lb. regular or tri-color rotini pasta
1/4 lb deli salami, 1/2 inch dice
1/4 lb deli ham, 1/2 inch dice
1(8-oz.) pkg fresh provolone cheese, 1/2 inch dice 
1 (8-oz.) pkg grape tomatoes
1 (15-oz.) can black olives,  drained 
1 (15-oz.) can quartered artichoke hearts, drained 
1/2 medium red onion, thinly sliced 
1 medium red bell pepper, 1/2 inch dice
1 medium green bell pepper, 1/2 inch dice
1-oz. fresh basil leaves, torn by hand 

Directions:
In a small blender, combine the oil, vinegar, mustard, onion powder, garlic powder, Italian seasoning, and season with salt and black pepper. Mix until well combined and set aside until ready to use.

Bring a large pot of salted water to a boil. Cook the pasta in the boiling water according to package directions to al-dente. Drain well.

In a large bowl, combine the drained pasta, salami, ham, cheese, tomatoes, olives, artichokes hearts, onion, bell peppers, and basil. Add in the dressing and toss to combined.

Cover and refrigerate until chilled, or at least 4 hours before serving.
